RECIPE · FROM THE LONG LUNCH

Daube provençale

Serves 6

4 hrs, mostly hands-off

Make a day ahead

  1. Marinate beef overnight in red wine with orange peel, garlic, and thyme.
  2. Brown the beef in olive oil, then the onions and carrots.
  3. Return everything to the pot with the marinade and a handful of olives.
  4. Braise low for three hours, until a spoon cuts the meat.
  5. Rest overnight. It tastes better the next day.
